Minestrone Soup
Mom’s minestrone soup recipe

Ingredients
10 cups beef broth
5 carrots, sliced
28 oz can diced tomatoes, do not drain
1 lb italian sausage
2 12 oz bag frozen itialian/french style green beans
27 oz can kidney beans, drained
1 lb frozen cheese tortellini
2 teaspoons italian seasoning
1 teaspoon garlic
salt and pepper to taste
Directions
oil and brown sausage
add carrots, green beans, garlic to pan, cook for 3 minutes
add tomatoes, broth, spices and simmer for 45 minutes
add tortellini and kidney beans, boil for 6-9 minutes
serves ~8 bowls
