Italian Meatballs

Lindner Family Recipe: Helen -> Richard -> Michael

Ingredients

  • 1 lb. ground beef

  • 1 onion, diced

  • 1 bell pepper, diced

  • 2-3 eggs

  • 1/2 cup cracker meal + parmesan OR panko, finely crushed

  • 2 cans hunt’s pasta sauce

  • salt and pepper

  • dried oregano

Directions

  • Set aside a small handful of diced onion.

  • Heat sauce in a large pot on low, adding the rest of the onion, diced bell pepper, and oregano (to taste).

  • Add ground beef, eggs, cracker meal/Parmesan, the handful of onion, and salt and pepper (to taste) to a large mixing bowl. Mix by hand.

  • Form into balls. Usually makes about 9 meatballs.

  • Place into sauce and simmer for at least 1 hour. Ready to serve.
